Cook onions with sausage until onions are translucent color. About 5 minutes
During this time, add garlic and let it cook with sausage and onions.
Add peppers. (We like our peppers slightly hard, so we don't cook this long. It depends on your taste as to how long you will cook this. For me, the peppers are cooked about 3 minutes.
Remove and Serve:
Remove from heat.
Serve with rice or noodle or as a side dish.
Notes
Rice Variations:
Plain rice
Rice with cilantro and lime
Rice with a chicken flavor since this recipe has a pork and chicken kielbasa
Tips:
Keeping the juices adds to the flavor of the rice
Draining, rinsing, and drying the sausage before adding onions is a healthy approach
Mixing sausage flavors helps tone down the spiciness of the hot sausage
