Close-up of a whole pink dragon fruit with bright magenta skin and green-tipped scales on a bamboo cutting board.
  • Cut about half an inch off each end.
  • Make a shallow cut lengthwise through the skin, about a quarter inch deep, stopping when you reach the flesh.
  • Lift an edge of the skin and peel it away. On a ripe fruit it often comes off in one piece.

Notes

Choose fruit with bright skin that gives slightly when pressed. Store whole ripe fruit in the fridge for several days, and keep cut fruit in an airtight container for a couple of days.
The seeds are edible. For smoothies, freeze cubes on a tray, then move them to a freezer bag.
