Frequently Asked Questions— Campbell’s Chicken and Rice Casserole

Can I use homemade mayonnaise in this recipe?

Yes — and I recommend it. Homemade avocado oil mayonnaise adds a cleaner flavor and pairs beautifully with the cream of chicken soup. Store bought works perfectly well too.

How do I store leftovers?

Store in a covered container in the refrigerator for up to 3 days. This casserole reheats beautifully — the topping softens slightly but the flavor is just as good the next day.

Can I substitute a different soup flavor?

Absolutely. If you don’t have three cans of cream of chicken on hand, cream of mushroom works well. It gives a slightly different flavor — a bit earthier and creamier — but just as delicious.

Can I use rotisserie chicken instead of boiling my own?

Yes — rotisserie chicken is a great shortcut that saves about 20 minutes of prep time. Shred or cube it and add it directly to the mixture. It actually adds extra flavor from the seasoning on the skin.

Can I make this casserole ahead of time?

Yes. Assemble the casserole the night before, cover tightly with plastic wrap, and refrigerate. Add the Rice Krispie topping and butter right before baking so it stays crispy. Bake as directed — you may need to add 5 minutes if it goes in cold from the fridge.

Can I freeze this casserole?

Yes — freeze before baking for best results. Assemble without the Rice Krispie topping, cover tightly, and freeze for up to 2 months. Thaw overnight in the refrigerator, add the topping, and bake as directed.

What vegetables can I add?

This recipe is very flexible. Bell peppers, broccoli florets, green beans, and zucchini all work well. Add them raw with the other vegetables — they’ll cook through in the oven.

Final Thoughts

This Campbell’s chicken and rice casserole has been on my family’s dinner table more times than I can count — and it never gets old. There’s something about that creamy filling and the crispy Rice Krispie topping that makes everyone come back for seconds before the dish even has a chance to cool down.

It’s the kind of meal that started as a pantry clean-out dinner and quietly turned into a family tradition. Simple ingredients, one dish, and a table full of happy people. That’s all you really need after a long day.
